RISOTTO
An Italian rice preparation!!
The best part about this recipe is nothing but lots of cheese..:P :D
When i tried this recipe for the first time, the rice had become a little over cooked but from the second time onwards, it was purrrrfect... ;)
Serves 3
Ingredients:

  • Uncooked rice- 2 cups, soaked for an hour
  • Finely chopped medium sized onions- 2
  • Cubed french beans- 15
  • Small cubed carrot- 1
  • Ready made tomato puree- 6 tbsp
  • Grated cheese- 3/4 cup (or 1 cup if more calories can be burnt..:P)
  • Unsalted butter- 3 tbsp
  • Sugar- 1 tsp
  • Fresh cream- 2 tbsp
  • Salt to taste
  • Freshly ground black pepper to taste
Method:
  • Heat butter in a non stick pan (preferably) and fry the onions till translucent.
  • Add the other veggies and stir fry for 2-3 minutes.
  • Add the soaked rice (without water) and mix gently for 3-4 minutes.
  • Add the tomato puree , fresh cream, 4 cups of water, salt, sugar and pepper.
  • Cover and cook on medium flame for 10-12 minutes.
  • Check once and if the rice is almost done then sprinkle the grated cheese all over the rice, cover and cook for another 3-4 minutes on low flame so that the cheese melts and flavours the rice.
  • Stir softly and serve hot.. And yes, dont forget to garnish with grated cheese..:)
